I would like to ask you a question, does it matter if the wiring on the same layer of the PCB forms an acute angle?

Does it matter if the lines on the same layer do not form acute angles? The hardware engineer said that he couldn't go this way, but my thought was that it was not on the same level, why not?

This requirement is unreasonable, not on the same layer has no effect. The main thing is that the adjacent layer traces cannot overlap; high-speed signal lines should be careful not to form loops when opening different layers of traces.

You can try to develop this kind of good habit. If the speed is not high, and there is GND in the middle, it is not a big problem.

Adjacent layers are not separated by gnd. If the distance between the two layers is too close, they will interfere with each other. It is best to lay the wires vertically to avoid sharp angles and overlapping wires.

Depending on the situation, it mainly depends on your stack. If the space is in the middle, it does not matter. If you lay the adjacent layer, try to lay the line vertically.
